It's Monday.

1. A & I colored this morning. It was lots of fun. We also went for a walk & played outside all before noon.
2. I want to try this recipe for lasagna roll ups. You can find it here.
3. We saw a total of 3 fireworks shows at the beach. A was so excited & went to bed later than usual.  He slept until 8 this morning. Hallelujah.
4. My kids love chocolate milk. It's so cute to hear Khloe ask for it.
5. I'm having trouble thinking of a clever number five so I'll just wish you a fun & stress free Monday!

Twas the night before Valentines

Lazy Girl's Stuffed Shells

I made this recipe tonight.

Instead of ravioli I used stuffed shells.

I also used ground turkey.

Served it with broccoli and it was good!

**After school Austin was T.I.R.E.D.  He cried all the way home.  I put him in pajamas and we watched George.  Apparently he didn't nap well - his teachers said he was restless.  Early bed time for him!

Banana Nut Muffins

See the picture of my Dottie?  She was cooking spaghetti when I took her picture.
I made these Monday and they were gone by Wednesday.
Yum.
 
Here's the recipe:
1 cup white flour
.5 cup whole wheat flour
1tsp. baking powder
1tsp. baking soda
3/4 c. or less brown sugar
2 ripe bananas
1/4 c. oil or applesauce - I used both
1/4 tsp. vanilla
2T. flaxseed meal (fiber)
1/3 c. oats
I slipped some pecans in a few as hubby is not a fan.
Dash of cinnamon in the batter and on top.


I made blueberry muffins this morning with the same recipe but changed a few things.
I used only applesauce, no oil.
I used 1 cup wheat flour and .5cup white.
Hubby likes to say, "They taste healthy."  But tasty too.
Austin helped me, too.  That was fun!

Since we are talking about food:
Austin ate a huge lunch!  We split Mama Rosa's breadsticks and I think he ate half.
Little Man is growing! So glad his appetite is, too.

Opinions

A has had very strong opinions about what he's been eating lately.
Let's just say Sunday morning we had to hold him down for him to eat breakfast.
I've been making him smoothies and it is working out a lot better.
Even better for me - there's spinach in that smoothie - and he drinks 2 cups!
Here's what I put in the blender:

frozen blueberries
frozen chobani champions yogurt
big handful of spinach leaves
1 banana
milk to cover it all
**sometimes I put in flaxseed for fiber & omega3

This morning there was more left over so K got some on his way to work!

I'm making these blueberry muffins right now.
I used whole wheat flour and added flax seed meal.
I can smell them in my oven.
I've made them before and hopefully they are "To Die For" like last time.

Last Week's Dinner

Monday - Annie's mac and cheese, baked beans, green beans with Italian dressing

Tuesday - Spaghetti with garlic & onion sauce, garlic and onion tomatoes and turkey sausage crumbles added with whole wheat penne - we took a walk while it was in the crockpot and I forgot to put parmesean cheese on top.  Next time...

Wednesday Night Supper at Church - pancakes, bacon, grits - yogurt, fruit, fruit loops for A

Thursday - I went to a fashion show fundraiser for Covenant Hospice with my parents.  They didn't have much food there so K and I had Banana Nut Crunch cereal when I got home.

Friday - We are having pizza with our friends from church. Papa Johns, cookies, rice crispie squares

Saturday - We had dinner with friends from church, again! J made a braided spaghetti roll, salad, calamari, cheesecake - yum!

Time and new things

Thank you Jesus, A is playing in his room longer independently.
For Mother's Morning Out I have 2.5 hours 2 mornings a week and 2ish hours during nap

So I'm trying new things like:

TheBroccoliHut's Over night oats - I like that it's good for me.  Didn't really like the taste, but I ate it all.  Will have to experiment with different flavors.

IowaGirlEat's breakfast tacos - We had a couple today for lunch.  The inside was good, but the tortilla wasn't tasty.  I need some Mexican ladies to make some from scratch!

NatSprat's Felt Owl - It didn't come out as cute as this one, but I think Savy liked it.  You should've seen her eyes!  I need to learn to sew.

Noodle and Doodle's Granola Bars - Yeah these were so sweet I had to thow them away. All of the brown sugar and honey mixed with pnut butter. Whew!

In an effort to find different activities during the week A and I went to the indoor pool last week during his spring break.  Their pool is. not. heated.  We sat on the side to get our legs used to the temp.  Then A was splashing so much I decided we should just get in.  We splashed and watched others and then his lips started shivering so we got out and watched kids jump off the diving board.

Thank you Jesus, we went to Publix and A got into the car cart.  He was having fun. I got what I needed. We checked out. I put my groceries in the car and he did. not. want. to. get. out!  What? I go to the grocery store and usually he is complaining most of the time!  Thank you Jesus!

Friday

Last night I turned K's alarm clock off. It vibrates at 7a.m. everyday and when A hears it he hums along and thus starts our day.

We slept until 8:15!

A played and played and I made him a shirt.

I turned on Classic Country and A helped me in the kitchen making 6 breakfast tacos for this weekend and next week.  He ate graham crackers, ham and cheese while I was making tacos. He looked and touched the eggs before I broke them and pretty much watched me and ate while I cooked.

K came home and A was so excited he did a couple of laps around the house.

What a good Friday morning!

Granola Bars

Every week its the same thing - go to the grocery store and get milk, yogurt and granola bars.  This weekend the three of us were watching Noodle and Doodle and they made some yummy looking granola bars.  I made them today while A napped.  You can find the recipe here.

I didn't use butter - and I added dark chocolate covered raisins, cinnamon, and flax seed meal along with some oats.

They are in the fridge 'setting' so I'll  let you know how they turned out.

****Holy Moly they are sweet.  Not sure how I feel about them.

Monday

This time last year Mr. A was a happy chubby little baby enjoying Spring Break!


Here's what we've done so far:

Breakfast
MMO
Zumba
Laundry
Take Khoe for a walk

Make Banana Nut muffins
1 cup applesauce
1.5 cups brown sugar
2 eggs
2 teaspoons each vanilla, baking soda, cinnamon
pinch of salt
1.5 cups whole wheat flour
1/2 cup pecans
1/2 cup oats
2 Tablespoons flaxseed meal


350 degrees 25 minutes - smelling good!!  Tastes good!!

Pick up A - when I got to his school he was playing with bubbles and squealing!!

The one about Athenos Yogurt.

This morning A and I went to drop off K's watch to get a new battery.  It stops during the night and he wakes up to a watch that says 3:45.  The jewelry store didn't open until 10 and it was right around 9 when we got there.  We went to Publix and got some things for dinner and such.  I picked up some Athenos Blueberry Yogurt to try because it was the cheapest Greek yogurt to be found - $1. We got home from Publix, let A play, put away groceries, and then I tried it.  It was tasty, but you've got to mix up the blueberry with the yogurt!  The yogurt isn't very tasty by itself, but really yummy with the blueberry mixed in.

Kudos Athenos you've won me over. I like it better than Chobani.

The one with fruits and veggies.


We are trying to eat healthier. Last week we decided we weren't going to eat out, eat more fruits and veggies, no pizza or red meat. It worked out really good. I stocked up at Sprouts. Did I mention we do not have any Dr. Pepper in the house? Miracle. We ate yummy foods during the week. This weekend we ordered a pizza and had Dr. Pepper for the football game and we soon realized it didn't taste that good to us. Here are some of the foods we had:

Almonds
Watermelon
Squash
Apples
Yogurt
Grapes
Cabbage
Salad
Strawberries

The picture is of my mom's famous strawberry shake. Here's the recipe:
Frozen strawberries
Banana (optional)
one container yogurt
scoop of instant vanilla pudding
scoop of strawberry jello
large scoop of rainbow sherbert or vanilla ice cream
milk
Blend it all together...
YUM-O!

Ahhh Summer

I made a yummy chicken salad today.

2 cans chunked chicken
1 cut up cucumber
1/2 cup chopped pecans
1/4 cup mayo
squirt of honey mustard
squirt of ranch dressing
squirt of honey

I mean, it's no River Nile, but hey it was really good on toasted bread with buffalo wing chips.




Random:

I saw one of my students at SuperTarget today! I was walking the dollar aisle and I heard "Hey Mrs. Boozer!!!!" Wide eyed and smiling there was Andrew from 2nd grade.

While K was out golfing with friends from church, I slept till 10:30 this morning then watched TV - flipped back and forth between a couple of shows All My Children, A Baby Story, Birth Stories....it was a great way to start summer!
