Lazy Girl's Stuffed Shells

I made this recipe tonight.

Instead of ravioli I used stuffed shells.

I also used ground turkey.

Served it with broccoli and it was good!

**After school Austin was T.I.R.E.D.  He cried all the way home.  I put him in pajamas and we watched George.  Apparently he didn't nap well - his teachers said he was restless.  Early bed time for him!

Date Night with Carolers

K & I went to eat at Olive Garden last night.  K ate spaghetti & meatballs as fast as I could eat half of my chicken parmesean.  It was yummy.  There was a waitress close to us 8 months pregnant.  I prayed for her back, legs and feet.  We were gobbling up our salad and some women in a line started walking toward the door. 

They were singing.

They were singing Christmas carols as they were walking past us.

Bahahaha

Then we went to Barnes & Noble and got each other a book.

Geez

I had to push the panic button today.

I also had to write referrals.

Why are kids so angry these days?

I mean, it's art for goodness sakes.  There is something really wrong here.

They don't pay me enough to hear students yell at each other and disturb the peace.

I deserve a cookie.

And that's just what I got...Thank you Panera!

Those punk kids made me miss my lunch so A and I treated ourselves after school and it was good.

Best part of my day...eating with my boy.

Here's to a great Friday....lets hope.

The things we miss.

Every weekend K and I wake up to either a crying dog or a happy little boy next door to us.  K will say, "Man I wish there was a Taco Cabana close by or Rudy's to get some breakfast tacos."

We've been in a rental house for almost a year now.  It was built in the 50's.  It has hardwood floors and 2 bedrooms.  Our house in TX was built in the 90's.  It had carpet, an open floor plan, high ceilings, and inside laundry.  We are thankful for this old house, but hope one day we can have that kind of house again we had in TX.

I used to teach 850 hispanic children every week.  They were excited, energetic and happy to be in art once a week.  Now I teach 115 teenagers everyday.  They are quite different from my sweet TX ones.  Sometimes expressionless, sometimes not happy to be there.  Crazy how things change.

It's the little things.

Last week's dinner

Saturday - spaghetti with asparagus (microwave in the bag from Publix)
Monday - chicken marsala, carrots (microwave in the bag from Publix), garlic breadsticks
Tuesday - mac&cheese with broccoli, corn/tom/okra, baked beans
Wednesday - K had leftover Salmon salad from Longhorn & I had Banana Nut Crunch cereal
Thursday - K & I went out to eat - Pizza Hut
Friday - K picked up Taco Bell on his way home from playing golf.
Saturday - K picked up Atlanta Bread's California Avacado sandwich for us.  Yum!

I am teaching Smudges this week at Hidden Lake Elementary.
I am also subbing for a high school art class.  Pray for me on Tuesday!  I've never taught high school.  I'm keeping an open mind.

Little Man got up early this morning so he was ready for a nap when he finished.

Banana Nut Muffins

See the picture of my Dottie?  She was cooking spaghetti when I took her picture.
I made these Monday and they were gone by Wednesday.
Yum.
 
Here's the recipe:
1 cup white flour
.5 cup whole wheat flour
1tsp. baking powder
1tsp. baking soda
3/4 c. or less brown sugar
2 ripe bananas
1/4 c. oil or applesauce - I used both
1/4 tsp. vanilla
2T. flaxseed meal (fiber)
1/3 c. oats
I slipped some pecans in a few as hubby is not a fan.
Dash of cinnamon in the batter and on top.


I made blueberry muffins this morning with the same recipe but changed a few things.
I used only applesauce, no oil.
I used 1 cup wheat flour and .5cup white.
Hubby likes to say, "They taste healthy."  But tasty too.
Austin helped me, too.  That was fun!

Since we are talking about food:
Austin ate a huge lunch!  We split Mama Rosa's breadsticks and I think he ate half.
Little Man is growing! So glad his appetite is, too.

Last week's dinner

Monday - Brown rice with beef tips and gravy, seasoned black beans
Tuesday - We printed a free kids meal coupon for Moe's and shared their nachos.  A had his first cheese quesadilla!
Wednesday - Our Wednesday evenings usually go like this:
Our church has mission projects going on outside of church so we have to pick what we want to do.
E: Hurry up lets go to church
K: What do you want to do?
E: I don't know. What do you want to do? We have 3 options.
K: I hope A is OK. (in the nursery)
E: I hope he is too.  Should we go get him?
K: Let's go get him and visit your parents.
E: OK.
So at my parents house we had their leftovers of chicken fingers, wings and bread.  Yum.
Thursday: K came home from work late and brought home Panera to share. Yum.
Friday:  My mom cooked yummy pasta for all of us before we met our new music minister.
Saturday: My cousin is in town from CA so we went to a pool party and I got full on my Aunt L's bean/corn salsa.
Sunday: Big lunch at my mom's house and we ate just some stuff around the house for dinner.

Thursday

A & I tried to go to the $2 movie today, but Holy Moly at the people and kids.  How to Train Your Dragon was showing, we have already watched it with A, and he liked it.  We got there 10 minutes early and there were about 100 people waiting to get in.  We'll try again next week.

We drove to the library, A played happily with the train and we checked out two new board books.  That's more our style anyway.

When bigger kids (train hogs) got to the library we decided to leave and go see whats going on at the ROC.  They are having winshape camp there right now.  We watched from the top of the gym and it was sensory overload but A sat in my lap and watched for 30 minutes. They had 10 stations and everybody was going everywhere, playing all kinds of games, flashing lights, you name it.

We got home and had lunch - fixed a smoothie and chicken nuggets, but A didn't want the chicken.  He also had some pnut butter and milk.

Little Man went down for a nap and I have been looking at the Pioneer Woman cookbook from the library.  I think I might make chicken parmesean soon.

Makes me hungry just thinking about it!

Opinions

A has had very strong opinions about what he's been eating lately.
Let's just say Sunday morning we had to hold him down for him to eat breakfast.
I've been making him smoothies and it is working out a lot better.
Even better for me - there's spinach in that smoothie - and he drinks 2 cups!
Here's what I put in the blender:

frozen blueberries
frozen chobani champions yogurt
big handful of spinach leaves
1 banana
milk to cover it all
**sometimes I put in flaxseed for fiber & omega3

This morning there was more left over so K got some on his way to work!

Just Some Stuff

We had a really crazy lightning storm Monday night.  I don't think I've ever seen that much lightning.  Our dog Wellington is afraid of storms.  He starts shaking, panting, and cowers in a corner if he's not in his bed.  I really like it when it rains hard because I don't have to water my flowers.  It seems like I'm having to water twice a day now.

Like right now thunder is THUNDERING and thankfully it hasn't woken up A.  Wellington, however has knocked over the iron by freaking out in his bed.  Sheesh.

Little Man played really well this morning which makes for a great morning all around.  We stayed at home most of the morning, but took a drive to get gas, take recycling and watch the big water slide at Water World before lunch.  Little Man is really loving chicken nuggets for lunch.  I'm afraid he's going to be a big eater like his Daddy.  If we could just get him to eat anything...now that would be awesome.

I am looking into jobs for the fall with our school system here.  Hoping and lots of praying something great will work out like it did here.

Last Week's Dinner

Monday - Kraft's Veggie Mac 'n Cheese, Fresh corn on the cob, Fresh cucumbers, seasoned rice - then we took my mom to Chill FroYo for her birthday
            
Tuesday - Homemade cheese pizza with cold watermelon...yum!

Wednesday - Picked up Mama Goldberg's sandwiches & ate them at church.

Thursday - We dropped off A at my parents and went to Rodeo and had chips & salsa, a chalupa, and green enchiladas. For dessert: mini oreo blizzard & small butterfinger

Friday - Before we went swimming we stopped at ChickFilA and got chicken strips, fries and a drink. K wanted it and we only had cereal for lunch so we were hungry.  We went swimming down at the farm, then watched the US Open at my parent's house.  Then just ate around the house when we got home.  We probably had more Banana Nut Crunch. Ha.

Saturday - The US Open is on and K wanted Papa John's so that's what he got.  Large Papa John's pizza with tomatoes and sausage.  And we had it Sunday for lunch.

Sunday - Happy Father's Day!  We had a happy plate of fresh cucumbers and a yogurt parfait.  Then K wanted Taco Bell so I picked up a bean burrito for him and nachos supreme for me.  The US Open is STILL on and K just said it won't be off until 9:30.  Sheesh.
